16. Grilled Tofu with Sriracha
It isn’t just meat-lovers that enjoy a savoury sriracha dish. This tofu tastes unbelievable after it has marinated for a few hours.
Preparation Time-15 minutes
Servings-4
Ingredients • 8 ounces extra firm tofu, drained
• 1 zucchini
• 1 red bell pepper
• 10 large mushrooms
• 1 ounce sriracha chili garlic sauce
• 2 ounces soy sauce
• 1 ounce sesame oil
• 2 ounces onion, diced
• 1 diced jalapeno pepper
• ground black pepper
Directions
1. Slice tofu, zucchini and bell pepper into large chunks and combine in a bowl with mushrooms.
2. Mix the rest of the Ingredients in a bowl and pour over the tofu mixture. Toss to coat. Cover the bowl with wrap and chill for 1-2 hours.
3. Preheat grill or barbecue on medium high and spray the grate with a light coat of cooking spray.
4. Using bamboo skewers, thread marinated tofu and vegetables in desired order and grill skewer for 10 minutes. Serve skewer with the rest of the marinade for dipping.
