In 2012, President Obama got the craft brewing scene excited when he released recipes for a White House Honey Ale and White House Honey Porter. The president’s honey came from hives on the White House lawn.

NICK’S LIQUORICE STOUT

We like dark beers. Our English Brown Ale (see page 92) is the epitome of a dark brown beery brew; our London Porter (see page 76) moves into even darker territory; but there is none more black than this beer, Nick’s Liquorice Stout. It’s a robust blend of black malts and roasted barley, is hopped to the max and has an extra black swirl of liquorice root. Not only is it our darkest beer, it’s also the strongest beer in the book and should therefore be matured for longer and handled with the respect it deserves.

Making time: 2¼ hours | Fermenting time: 1 to 2 weeks | Maturing time: 3 weeks

⅓ cup black malt

⅓ cup roasted barley

2½ cups liquid malt extract (light or amber)

1 stick of liquorice root

1 handful of bittering hops—e.g.

Goldings, Target, Columbus

1 handful of aroma hops—e.g. Cascade, Nelson Sauvin, Citra

ale or brewer’s yeast

½ teaspoon white sugar per bottle, for priming
