There are a lot of nonbelievers out there who simply don’t care for scones. I understand. I’ve tasted some awful, dry, coffee-shop versions in my day. Those are not my scones. With the right ingredients in the proper ratios, scones are delightful.

All of these recipes yield a resilient dough that can be mixed and shaped in advance and held in the fridge or freezer for several days if wrapped tightly. Bring to room temperature and coat with the egg wash immediately before baking.
