CRAB CORNMEAL FRITTERS WITH LIME AIOLI
THESE FRITTERS HINT at hush puppies; the nuttiness of cornmeal is a tasty complement to the sweet crabmeat. This is ideal for flakier meat that will blend well into the cornmeal batter, though a few larger pieces of meat here and there provide decadent nuggets to bite into. Temperature control when deep-frying is important, not only for your safety but to assure that the fritters will be cooked through, not still gooey, when the outside is nicely browned. Itâs best to use a cooking thermometer to keep tabs on the heat level while youâre frying. The fritters will be at their best if served right away.
