Pierre Franey was one of the most creative and versatile chefs I've ever had the privilege of knowing, and I'll never forget the day at his home in Springs on Long Island when, confronted with extra sea bass fillets after a photo shoot for a cookbook, he whipped up this unusual casserole for a couple of close friends who'd dropped by. Never would I have thought of combining fish, apples, and brown sugar, but it turned out to be one of the most memorable casseroles I'd ever tasted.
