ON THE STOVETOP

Frankly, this is where I spend most of my time in the kitchen, and I bet you do, too: standing at the stove sautéing onions, stir-frying peppers and mushrooms, pan-frying cauliflower slices, or boiling pasta to finish in a quick pan sauce. And why not? Stovetop cooking is by far the most versatile, and it’s this kind of cooking that leaves you feeling most in control because you can gauge just what’s happening—dipping in for a taste, checking to see if something is tender or browned or both, stirring, lifting up and peeking, poking, bending your head close to the pot and inhaling the fragrant steam.

In fact, if I had to choose just two styles of dinner to make for myself from here to eternity, I would probably pick pasta and stir-fries. I do one or the other at least twice a week, if not more. My favorite pasta dishes are pure comfort food, and they come together in no longer than it takes to boil the dried pasta; I make the sauce simultaneously, and finish cooking the former in the latter. Stir-fries are even quicker, especially if I’ve already got the rice done, and there’s no better way to make vegetables crisp-tender.

The best thing about making dinner on the stovetop is this: there’s a good chance you can do the whole thing in one pan, building flavors and adding ingredients as you go. For us single cooks, who don’t have the benefit of you-cook-and-I’ll-clean partnerships, that means fewer dishes: a beautiful thing.
