The Plant Paradox 2.0
Itâs been more than twenty years since I started treating patients with dietary changes and supplementation rather than resorting to surgery or pharmacologic drugs to restore their health and reverse many common and uncommon ailments. Donât get me wrong; I prescribe drugs when needed, and up until a few years ago, I still performed heart surgery. But thanks to the thousands of patients who volunteered to have blood work done every three months (or whenever a new dietary change or supplement choice was added), a very clear picture began to emerge of which supplements and foods, in which quantities, consumed at which time of the day or year, made a measurable difference in both the patientâs blood work and symptoms.
I call what I do restorative medicine, paying homage to Hippocratesâ belief that the green life-force energy I mentioned earlier would do all the work in restoring patientsâ health once I identified the dietary culprits and environmental factors keeping that energy suppressed. That initial work resulted in my first book, Dr. Gundryâs Diet Evolution: Turn Off the Genes That Are Killing You and Lose the Weight for Good, which was published in 2008.
In that book, I wrote about the reversal of several autoimmune diseases, and shortly after its release, more and more people with those diseases started appearing at my clinics. Being a surgeon by training, I told those patients that I didnât know a lot about autoimmune diseases per se. But as a transplant immunology researcher, I sure knew a lot about what the immune system was looking for and how it behaved. I told those patients that if they wanted to âplayâ and learn with me, I was all in!
With that in mind, if you had asked me twenty years ago what I thought about the term leaky gut, I probably would have told you that it was pseudoscience. But thanks to my research background in human evolutionary biology as an undergraduate at Yale University, my knowledge suggested that over possibly millions of years, we had adapted to eating only certain types of foods and that our immune systems might not recognize recent additions to our diet (ârecentâ meaning within the last ten thousand to five hundred years) as friendly.
As I instructed my patients to remove the âmodernâ foods that were introduced over the last ten thousand years from their diets, I saw remarkable changes in them and their blood work. Consistently and reproducibly, about 90 percent of the people who followed the program saw their health restored, their autoimmune disease markers and symptoms reversed, their coronary artery disease reversed, their arthritis reversed, their diabetes reversed, their migraines subsided, and so on. It was so remarkable that I published my second book, The Plant Paradox: The Hidden Dangers in âHealthyâ Foods That Cause Disease and Weight Gain, to critical and popular acclaim in 2017, and the rest, as they say, is history.
