Gingerbread and Pumpkin Trifle
Trifle is a layered dessert made with cake, fruit, and cream. It is a long-standing holiday tradition in England. They also call this Tipsy Cake, Tipsy Pudding, Tipsy Squire, or Tipsy Parson, probably because of the amount of sherry in the original version. We skipped the sherry and made ours with gingerbread, pumpkin cream, and a few pecans to add a little crunch.
SERVES 8 TO 10
CAKE
1½ teaspoons white wine vinegar
½ cup milk
1 egg
½ cup light molasses
¼ cup butter, melted
¼ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cloves
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1½ cups flour
