Pork Cutlets with Aloha Salsa

These lightly seasoned cutlets taste delicious on their own, but the island-style salsa adds a refreshing accent. Serve with brown rice and broccoli or crisp, tender green beans.

Aloha Salsa

1 cup fresh pineapple, chopped in small pieces

¼ cup red onion, finely chopped

¼ cup green or red bell pepper, chopped

½ teaspoon ground cinnamon

1 teaspoon low-sodium soy sauce

⅛ teaspoon crushed red pepper

⅛ teaspoon ground black pepper

2 eggs

2 tablespoons milk

¼ cup flour

¼ cup panko breadcrumbs

4 teaspoons sesame seeds

1 pound boneless, thin pork cutlets (⅜- to ½-inch thick)

lemon pepper and salt

¼ cup cornstarch

oil for misting or cooking spray
