Savoury Waffles with Creamy Mushrooms

Make up some of these waffles for a brunch or light lunch. They can be made in advance and kept in the fridge for up to 2 days, making them ideal as a grab-and-go breakfast option. This recipe is dairy-free, but you can add a couple of spoonfuls of grated Parmesan cheese to the batter, if you like.

Makes 4 large waffles

Preparation: 15 minutes

Cooking: 10 minutes

100–125ml/3½–4fl oz/scant ½ cup½ cup almond milk

5 eggs

100g/3½oz/scant 1 cup almond flour (not ground almonds)

30g/1oz/¼ cup coconut flour

3 tbsp arrowroot powder

1 tsp bicarbonate of soda

¼ tsp ground turmeric

2 tbsp nutritional yeast flakes optional (or use grated Parmesan cheese)

2 tbsp extra virgin olive oil, or MCT oil or coconut oil, plus 2 tsp olive oil and extra for greasing

2 tsp apple cider vinegar

2 garlic cloves, crushed

1 tomato, chopped

8 button or chestnut mushrooms, thinly sliced

100ml/3½fl oz/scant ½ cup full-fat canned coconut milk

sea salt and ground black pepper

1 Pour 100ml/3½fl oz/scant ½ cup almond milk into a high-speed blender or food processor and add the eggs, flours, arrowroot, bicarbonate of soda, ¼ teaspoon salt, turmeric, yeast flakes, the 2 tablespoons oil and the vinegar. Whiz to form a smooth, thick batter, adding a little more milk if needed.

2 Grease a waffle iron. Pour the batter into the waffle iron and cook for 5 minutes or according to the manufacturer’s directions. Repeat with the remaining batter.

3 Meanwhile, to make the creamy mushrooms, heat the 2 teaspoons oil in a frying pan over a low heat and cook the garlic and tomato for 2 minutes, stirring occasionally. Add the mushrooms and fry for another 2 minutes or until soft. Pour in the milk and simmer for 2 minutes to thicken the sauce. Season with salt and pepper and serve with the waffles.
