Herbs.

Herbs are a must for any garden and with a little knowledge can be used in your day-to-day cooking and can be useful in many ways at not only attracting wildlife, but most of them have the most amazing aromas and if you have a shady area that needs filling, many herbs will be happy to grow there with some preferring it, and growing your own herbs is a simple way to save on buying them.

From my experience, children love herbs because so many have aromatic scent and enhance the garden to another level. My grandson quit often nips off mints leaves for no other reason than to rub and smell them, as I do. If you do use herbs in your cooking, it would seem crazy not to incorporate them in your garden design. What better way than picking your own herbs from your garden and nothing can be fresher than outside your back door. Even a just a few pots just outside your kitchen can yield as many herbs as you would require and are simple to freeze for off season use, or dried. Here are some for the most commonly used herbs but the list is extensive and once you delve into this topic, it is truly vast. Historically, herbs have been with us from the beginning of human colonisation of the planet and have been the fore runners to many modern-day medications. Do learn which herbs you can and cannot use if you are venturing for the more obscure herbs because like so many plants, some are dangerous and poisonous.

Angelica. This is a bushy biennial with yellowish, green flowers than can grow to 5-6 feet tall. Sow the first year, then thin to 12 inches apart and will need support, also prefers moist soil & shade.

Aniseed. This is an annual with white dainty flowers and can grow to 12-18 inches tall & may need support in windy areas.

Balm. This is a bushy perennial with white flowers and can grow to 30 inches tall. You can cut this back in the winter and is easily multiplied by root division in spring & prefers moist soil & shade.

Basil. This is a bushy annual with white flower and can grow 24 inches tall. Thin seeds to 12 inches apart and nip out the tips to encourage bushy growth & likes a rich soil.

Bay. This is an ornamental tree and can grow to 3.5-5 metres tall. You can keep the plant small by pruning, and they do well in containers. It has aromatic leaves and have many uses in cooking.

Chives. This is a perennial with round spiky leaves with mauve flowers & will need regular picking and the flowers, removing to keep it vigorous and can be dug up in autumn and the bulbs divided to increase your plants.

Coriander. This is an annual with pink lacy flowers that can grow to 24 inches tall. Has many uses in cooking.

Dill. This is an annual with bluish green feathery leaves and can grow to 36 inches tall.
