This dish of eggs poached in a sauce of tomatoes, peppers, and aromatics is heavily spiced, soul-wakening, and easy enough to make for two campers or double or triple for a crowd. Feel free to swap in whatever veggies and spices you have on hand—we often use a mild curry and smoky cumin, but other spices such as smoked paprika, garam masala, or coriander work well—and for extra protein, you can add sausage or beans. The most important thing is to make sure you let the tomato sauce thicken before adding your eggs. It can be tough to wait, but it makes all the difference. To take it to the next level, we highly recommend topping this dish with a briny cheese, such as barrel-aged feta.
