DIRECTIONS

Add the gin, Cointreau, and bitters to a mixing glass with ice.

Stir and strain into a cocktail glass.

Using a lighter, flick open the flame using one hand while your other hand squeezes an orange peel so that the oils squirt out and through the flame and into the glass.

Rim the glass with the orange peel and remaining oils and discard. Repeat with the remaining 2 orange peels.

FIRE-SAFETY NOTES

Make sure you’re sober when using fire.

Always make sure your hands, the counter, the lighter, and anything else you don’t want to set on fire have no alcohol on them. In fact, it’s best to remove anything flammable from your prep area.

Do not use a plastic cup or a plastic straw near fire.

Sometimes fire is hard to see, especially if you’re in an area with a lot of light, so try turning down the lights so you can see the flame, but not so much that you can’t see what you’re doing.
