NUT-RICH BREADS AND MUFFINS
TOASTED PECAN SPICE WAFFLES
Nut lovers will find nothing to complain about with a breakfast of these pecan-packed beauties.
¾ cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 tablespoons brown sugar
¼ teaspoon cinnamon
â teaspoon ground ginger
1 cup buttermilk
2 eggs
1 ½ cups pecan halves, toasted
2 tablespoons butter, melted
Preheat the waffle iron.
Combine flour, baking soda and powder, salt, brown sugar, cinnamon, and ginger in large mixing bowl.
In another bowl, whisk together buttermilk and eggs. Pour into dry ingredients. Gently whisk to combine.
Finely chop ½ cup of the nuts and leave the rest whole. Stir chopped nuts and butter into the batter.
Pour onto the waffle iron and follow the manufacturerâs instructions. Scatter remaining pecans over top, and serve with maple syrup.
