Eggplant Stew with White Beans

Swiss Chard with Pine Nuts

SWISS CHARD WITH PINE NUTS

(Panjar sokhov yev snobarov)

Ingredients:

1 bunch Swiss Chard

1 large onion, chopped (about 1 cup)

2 cloves garlic, chopped

4 tablespoons olive oil

¼ cup pine nuts

2 tablespoons lemon juice

½ teaspoon dry basil

½ teaspoon cumin

salt and pepper (red & black)

Chop the onion and garlic, put in a large saucepan or frying pan, and sauté for several minutes. Then add olive oil and stir frequently. Cook until onions are soft and translucent. While cooking, wash and chop the Swiss Chard and then add to onions. Sauté this mix until the chard is wilted, and then add pine nuts, lemon juice, and all other spices. Sauté for several more minutes and serve.

Serves 2-3, and can be served with any pasta, pilaf, or as stuffing for baked potato, or simply as a sandwich with pita bread.
