Heat oil in a big frying pan. Stir-fry garlic & jalapeño pepper in heated oil for 1 min till aromatic.
Mix in quinoa, black beans, chicken broth, tomatoes, & corn to the frying pan. Season with chili powder, pepper flakes, cumin, black pepper, & salt. Boil.
Cover the frying pan, lower to low heat, and lightly boil for 20 mins until quinoa is soft and liquid is largely absorbed.
Mix in lime juice, cilantro, & avocado.
