Peppermint Cracker Toffee
Your friends and family will go crackers for this tempting toffee.

Ingredient List:
40 saltine crackers
1 cup unsalted butter
1 cup granulated sugar
1 (11 ounce) package white choc chips
6 candy canes (crushed)

Instructions:
1. Line a 15x10x1” baking tray with parchment paper. Preheat the main oven to 375 degrees F.
2. Arrange the saltines in a single layer on the baking tray.
3. In a small-sized saucepan over moderate to high heat, melt the unsalted butter.
4. Add the granulated sugar and bring to boil, continually stirring. As soon as the mixture comes to boil, take the saucepan off the heat.
5. Pour the mixture over the saltines and place in the oven for 10-12 minutes, or until the crackers are caramelized and golden.
6. Scatter with white choc chips and allow to rest for 5-7 minutes.
7. Evenly spread the mixture over the crackers and sprinkle with the crushed candy canes.
8. Allow to set and store in a re-sealable container for up to 4-5 days.
