This book is lightly sprinkled with lower-fat desserts (indeed, there is only one in this chapter), but it is even more liberally laced with the lessons about flavor that I learned in creating them. By the time I turned my attention to better-quality chocolates with more distinctive flavors, those lessons were so fully integrated into my baking that I sometimes forgot how effective they can be.
*CHOCOLATE-FLECKED COCOA SOUFFLÉS
I like chocolate soufflés to be more rich and chocolatey than light and ethereal. These push the limits with flavor and richness, even though each has less than 7 grams of fat and only 180 calories. Individual dishes work better than a single large soufflé here; that way each guest gets to enjoy the contrast of crunchy sugared edges and gooey interior without having to share. These come with a do-ahead feature: You can cover and refrigerate the unbaked soufflés for up to a day. Preheat the oven toward the end of the meal, then pop the soufflés in the oven for less than 15 minutes. Voilà! / Serves 8
