Smoky French Lentil Soup with White Balsamic Reduction
This is one of my favorite soups to turn to when Iâm craving something nutritious and simple. I love the way French lentils hold their shape a bit better than other lentil varieties, so make sure you are using them in this recipe.
Serves 8
1 Tbsp olive oil
1 yellow onion, diced
2 celery stalks, diced
2 carrots, peeled and diced
3 garlic cloves, minced
3 thyme sprigs, plus more for serving
1 Tbsp smoked paprika
1 tsp salt
â tsp cayenne pepper
4 cups [960 ml] Homemade Roasted Vegetable Broth (page 209) or store-bought low-sodium vegetable broth
One 14½ oz [415 g] can diced fire-roasted tomatoes
1 cup [200 g] French green lentils, rinsed
2 bay leaves
½ cup [120 ml] white balsamic vinegar
1 Tbsp red wine vinegar
