Wash carrots, peel and grate.
Slice mango, then cut into cubes. Add to carrots. Add craisins.
Add mayonnaise. Add more or less according to taste.
Stir to lightly coat ingredients with mayonnaise. Refrigerate and let it set for 30 minutes so the flavors mingle together.
*This made a delicious, sweet salad complemented by the nutty taste of the carrots, the tartness of cranberries, and sweetness of the mango. The mayonnaise acted as a base and blended it all together.
I did not add salt or sugar to this. The natural sweetness of the produce was all that was needed.
This recipe is easily adapted to use whatever you have in the refrigerator. To the grated carrots, just add crushed pineapple, coconut, diced apples, raisins or whatever you like.
