Here, an easy sponge cake is rolled around a frozen mousse known as semifreddo (in Italian, literally “half cold”). Lemon and blackberries give it bright flavor and color. SERVES 8 TO 10

⅔ cup sifted cake flour (not self-rising), plus more for pan

Pinch of salt

3 large whole eggs plus 2 large egg yolks

¾ cup granulated sugar

¼ cup (½ stick) unsalted butter, melted and cooled

Confectioners’ sugar, for dusting
