Low-Sodium Soy Sauce

If you need to cut down on sodium in your diet, you can use a low-sodium soy sauce in any of these marinades, without any loss in flavor.

Pineapple-Sesame Marinade

Light, sweet, and versatile, this is a good marinade for grilled stir-fry of any kind.

Makes about 1¾ cups

1 cup pineapple juice

¼ cup soy sauce

2 tablespoons clover honey

2 teaspoons minced fresh gingerroot

2 teaspoons toasted sesame seeds*

¼ cup vegetable oil

2 tablespoons sesame oil

Combine the pineapple juice, soy sauce, honey, ginger, and sesame seeds in a nonreactive bowl. In a separate bowl, mix the two oils. Using a wire whisk, slowly beat in the combined oils, a little at a time, until the mixture is emulsified.

Use the marinade immediately, or store it in the refrigerator for up to 2 weeks. Allow the mixture to come to room temperature before using.
