Basic Bruschetta
YIELD: 4 TO 6 SERVINGS
TOPPING
1 pound (454 g) Roma tomatoes, chopped
3 tablespoons (7.5 g) fresh basil, julienned
1 clove garlic, minced
1 tablespoon (15 ml) olive oil
2 teaspoons balsamic vinegar
¼ teaspoon black pepper
¼ teaspoon sea salt
BREAD
1 small baguette
2 tablespoons (15 ml) olive oil
¼ teaspoon black pepper
TO MAKE THE TOPPING: In a bowl, combine the chopped tomatoes, basil, garlic, olive oil, balsamic vinegar, pepper, and sea salt. Cover and let sit for 30 minutes.
TO MAKE THE BREAD: Preheat the broiler. Cut the bread on the diagonal into ½-inch (1.3 cm) thick slices. Place on a baking sheet, brush each slice with olive oil, and add a sprinkle of black pepper. Place the tray under the broiler and lightly toast, 30 to 60 seconds.
Remove the bread slices, top each with a hefty spoonful of the tomato mixture, and serve. The tomato mixture can be made the day before and stored in the refrigerator until ready to use.
