SUMMER SUCCOTASH

Wonderful in the summer when vegetables are at their peak of freshness.

Serves 8 to 10

2 tablespoons butter

1 large mild onion, chopped

2 large tomatoes, chopped, with juice

1 pound okra, sliced

2 cups corn, cut from cob

2 cups cooked butter beans

1 teaspoon Lawry’s seasoned salt

cracked black pepper to taste

Melt the butter in a large Dutch oven and sauté the onion until tender.

Add the tomatoes and okra and cook until the okra is tender. Stir in the corn and butter beans and cook a few minutes for flavors to blend. Season with salt and pepper.

Note: This is even better cooked a day ahead and reheated.
