Place the biscuits ½ inch apart on a baking sheet. Gather the scraps, reshape them, and pat the dough out to a ½-inch thickness. Cut out as above. Discard any remaining scraps.
Bake for 15 to 17 minutes, rotating the pan once halfway through, until the tops are golden brown. Brush the tops with the melted butter. Serve immediately.
Chive and Red Pepper Cornmeal Biscuits
This is the perfect biscuit to serve alongside a bowl of chili or soup. The cornmeal and spices, along with hints of fire from the red pepper flakes, give them a bit of an attitude.
