Quinoa Vegetable Soup

Prep Time: 15 minutes | Cook Time: 30 minutes | Servings: 6 | Total Time: 45 minutes

Ingredients:

1 cup quinoa, rinsed

1 onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 can diced tomatoes

6 cups vegetable broth

2 cups chopped kale or spinach

teaspoon dried thyme

Salt and pepper to taste

Preparation:

​1. ​In a large pot, sauté onion, carrots, celery, and garlic until softened.

​2. ​Add diced tomatoes, vegetable broth, quinoa, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes.

​3. ​Stir in chopped kale or spinach and cook for an additional 5 minutes until wilted.
