Dressing

½ cup plain Greek yogurt

1 tablespoon lemon juice

1 clove garlic, coarsely chopped

¼ cup mint leaves

Salt and pepper, to taste

Preparation

To make the dressing: In a food processor, whizz all the dressing ingredients up until smooth. Season with salt and pepper to taste. Divide the dressing equally among 4 pint-sized jars.

Layer the rest of the ingredients in the following order: chickpeas, onion, bell pepper, cucumber, cheese, spinach, and parsley.

Cover the jars with lids and store them in the fridge.
